A NEW SELECTION FROM THE STAR PINK BOURBON PRODUCER OF 2024!
Finca La Divisa is located in the northern part of Zona Cafétera, the heart of Colombia's coffee belt, high in the Andes. In La Divisa, they grow several varieties of coffee: Castillo, Colombia, Pink Bourbon, and in 2018, they decided to plant 5,000 Geisha trees. Diofanor Ruiz has handed over management of the farm to his son, Sabastion. Here, the ripest, best-quality coffee berries are meticulously hand-selected. They are then sun-dried in special coffee beds under temperature control until they reach ideal humidity conditions. This microlot coffee is 100% Castillo, developed by the Federación Nacional de Cafeteros. Castillo is more productive than Caturra and highly resistant to coffee leaf rust.
In addition to coffee trees, Diofanor has planted various other trees in La Divisa to improve soil structure, provide shade for the coffee trees, and increase the farm's resilience. He has a collection of fruits such as bananas, tangerines, guavas, and oranges. Diofanor has also planted native trees such as Guamo, Guayacanes, and Tigua to contribute to the agroforestry in his area. Speaking with Diofanor, he recalls a time when no one had tasted their own coffee. This wasn't considered a big deal for the farmers because there was a huge difference in their understanding.

Brewing Recipe for the Curious
- Cafec Deep 27 Dripper
- Cafec Abaca+ Filter Paper
- Comandante 19-20 Clicks
- 15g Coffee
- 94C – 240g 80ppm water / Our recommended ready-made water is Iceberg.
- Total brewing time: 2:15
Filter and Brewing Equipment Preparation: First, soak the filter in hot water. This step warms up your brewing equipment and helps your coffee taste better.
Pre-brewing Process: Pre-brew for 30 seconds using 45 grams of water. If your coffee isn't very fresh and mature the first time, you might consider extending this time a bit.
First Pour of Water: Begin your first pour around the 30-second mark. Your total pour should be 120 grams, and do so slowly.
Second Pouring: Make your second pour around 1:10, bringing the total amount of water to 180 grams.
Final Pouring: At 1:40, proceed to the third and final pour, adding a total of 240 grams of water.
Spinning: After the final pour, you can give the coffee a vigorous spin to ensure a homogeneous mixture.
Timing: With this recipe, your coffee will brew in approximately 2 minutes and 15 seconds.
